A lot of people like to eat fried rice, but what some do not know is that it can actually be prepared without frying any of the Ingredients and can even be prepared with Ofada rice. Oh YES!
This method of fried rice is a must try for lovers of fried rice who would like to try something new and healthier, Especially if you’re like me and wants to avoid fried foods.😄
Meanwhile, I chosed Ofada rice because, it is a good source of essential minerals such as phosphorus, zinc and folate, as well as fibre that aids digestion. It is way more healthier than the normal Thai-polished rice.
Some people do not like Ofada rice because of its smell, “i m not left out” but when parboiled and washed properly the smell varnishes…
This no-fry fried rice recipe is the best of both worlds – it yields a delicious, colorful and appetizing rice with no frying involved.
Any type of rice can be used for this.
This recipe requires, less water and more concentration in other to achieve the desired result.
This dish is full of healthy fiber, protein, good fat and good carbs, and is loaded with vitamins, minerals and antioxidants. Your whole body will thank you for it.
So, let’s cook.
2cups Ofada rice
Garlic and ginger
Liver stock water
100g diced cooked liver
1 tablespoon curry powder
½ cup green beans and green peas
½ cup diced carrots
½ cup sweet corn
3 tablespoons powdered pepper
Half tablespoon Oregano powder
Salt (to taste)
1 stock cube
1 tablespoon thyme
Wash rice and pour into a neat pot, live to parboil for about 3 minutes. Sieve and transfer into a fresh pot.
Pour a cup of water into the already parboiled rice, pour in the chopped carrots, 1/2 spoonful of Olive oil and peas, cover and live to boil together for few minutes.
In another sauce pan, pour in the liver stock, garlic, ginger, diced liver, grounded pepper, white pepper, stock cubes, salt, oregano, and all the spices listed above, including the green peas (don’t add in the onions, green beans, sweet corn and green bell pepper yet, because of their tender nature, and in other to retain their flavor, they will be added last), allow to boil for two minutes.
When the rice is soft a bit,
Pour the sauce into the rice, keep stirring using a nonmetallic spoon, cook together, cover and let the water dry up.
Finally add in the onions green pepper, green beans and sweet corn, stir, and allow to simmer together for 3minutes or less. Turn of the heat, serve and enjoy…
