So many times I love to cook my Okra with a whole lot of palm oil, i recently tried the oil-less recipe, it was super delicious, even more delicious than the normal okra soup we all know. This soup is packed with nutrients, it is a delight. You can sometime switch from the regular okra to oil-less okra. Feel free to use any protein of choice, and I m sure it will taste very good. I chose to use chicken.
This recipe would feed a family of four conveniently; feel free to adjust and adapt the recipe to suit your family size and pocket.
Ingredients
500g fresh okra, chopped
1 kg of chicken breast, cut in pieces, washed
1 small onion, finely chopped
2 scotch bonnet chillies (ata rodo), chopped
Few pieces of fresh shrimps
1tbs Ground crayfish (optional)
Dry fish: washed and cleaned
Salt (optional)
Seasoning cube (I used knorr cubes)
Preparation:
Add okra to a food processor and pulse few times.
Place a shallow pan on medium heat, add in your chicken stock and leave to boil.
Add the chopped peppers and onion and boil for another 3-5 minutes
Add the chicken, shrimps and bring to boil for about 2 minutes
Add the okra to the sauce and stir till well incorporated (add more water if need be)
Stir in seasoning, crayfish, dryfish and salt and cook for another 2-3 minutes. Continue to cook for another 3 minutes. Take it off the heat and serve with any swallow of choice.
